Veggie Cobb Salad with Vegan Tzatziki

I don't think I've ever seen a recipe for a vegan cobb salad so this is my take on it!
I know the traditional cobb salad typically comes with a lot of non-vegan ingredients, but with the right dressing you can make any salad taste delicious!

Ingredients:
Salad Ingredients:
1 head of romaine lettuce
1/2 cup cherry tomatoes
1/2 a cucumber
1/2 a block of tofu, pressed
1 avocado
1/2 cup cooked corn
Tzatziki Ingredients:
1/2 block tofu
1/2 cup vegan mayonnaise
1/2 a cucumber
1 clove garlic
1 tbsp lemon juice
1/4 cup fresh dill
1/4 tsp salt
Instructions:
For the Tzatziki...
Blend all but the cucumber and half the dill in the blender until smooth. Mince the remaining dill and stir into the sauce. Cut the cucumber in half lengthwise and scoop out the seeds with a spoon. Shred the cucumber with a cheese grater and stir into the sauce. Refrigerate until ready to use.
For the salad...
Chop everything into bite size pieces Then add to a big bowl, mix everything together and enjoy!
