15 Minute Thai Red Curry with Fresh Basil

This recipe is so easy and delicious make if you're in a curry!

I mean hurry...








Ingredients:

  • Rice Noodles

  • Seasonal Vegetables (I used Zucchini, Carrots, Red Cabbage, Broccoli, and fresh basil)

  • Oil for cooking vegetables

  • Red Curry Paste

  • 1 Can Coconut Milk







Instructions:


Cook rice noodles according to package and heat a pan on medium with canola or sesame oil (or oil of choice). Press tofu, chop into bit size pieces and pan-fry until golden brown.


Put tofu in a separate bowl then cook seasonal veggies in the same pan for 5 minutes. Add red curry paste and coconut milk, give it a good stir and leave on medium low until vegetables are tender.


Add the tofu to the pan to heat up and absorb the red curry sauce. Divide noodles into bowls and top with the red curry!


Optional:

Garnish with basil or cilantro, lime Juice, &/or sesame seeds and enjoy!
