Banana Chocolate Chip Muffins, Vegan, GF

These are the best gluten free recipe I've tried in a while!


It's so hard to find gluten free alternatives so I tend to make my own in large batches and freeze them. If you're not gluten free, try substituting in regular flour at a 1:1 ratio. If you haven't used spelt flour before, keep in mind not to over-mix it in baking.






Ingredients:

  • 2 Bananas

  • 3/4 cup + 2 tbsp Non-Dairy Milk

  • 1 tsp Apple Cider Vinegar

  • 1/4 cup Maple Syrup

  • 1 tsp Vanilla Extract

  • 1/4 cup Coconut Oil (melted)

  • 2 cups Spelt Flour

  • 5 tbsp Coconut Sugar

  • 2 tsp Baking Powder

  • 1 1/2 tsp Cinnamon

  • 1/2 tsp Salt

  • 1/2 tsp Baking Soda

  • 1 Package of vegan Chocolate Chips






Instructions:


Preheat oven 350°F & line a muffin tin.


Melt coconut oil and set aside. Mash bananas, then add to a bowl with the remaining wet ingredients (not coconut oil).


In a large bowl mix dry ingredients.


Once cooled, mix coconut oil into the wet mixture then pour the wet ingredients into the dry ingredients and stir (be careful not to over mix).


Fold in chocolate chips then fill muffin papers 3/4 full. Bake at 350°F for 25 mins. Let cool in the pan for 5 to 8 mins then transfer muffins to a cooling rack and cool for another 15 mins.
